Chicken A La Keiv
(Serves 4)
Ingredients – 4 chicken breasts (80 gram each), 160 gm butter, 5ml lemon juice, 5 gm chopped parsley, 2 gm salt, dried white breadcrumbs, 2 eggs, 100 gm flour, 10 gm mustard, sunflower oil for deep frying, 120 gm green peas, 120 gm carrots, 300 gm mashed potatoes.
Method – Flatten chicken breasts and season with salt and white pepper and keep aside. Blend butter with lemon juice, parsley and salt. Make 4 small patties and keep it in refrigerator. Fill individual butter patties on the seasoned chicken breasts and fold inside the breast. Prepare a batter of bitten egg, flour, seasoning and mustard. Dip the breasts in batter and roll on crumbs. Chill the crumbed breast at least for an hour. Crumb the breasts once again. Heat the oil and deep fry. Served with mashed potato, sautĂ©ed green peas and carrots.
